February Food Blahs

You guys know I love to cook, and I'm a fair dab at it, according to my family.  But this month every day has seemed like such a chore to decide what to fix for dinner each day and then to do it!  I get like this once in a while.  It will pass, but in the meantime I'm really getting tired of the same 'ole thing.  It feels like I've fixed the same two weeks' worth of menus for the past several months.  No one else is complaining, so I find myself in the unique position to not only be the one planning and preparing the menu but also the one saying "This again??"

Anyone have any neat recipes you'd like to share?  We like good old plain, country cooking for the most part.  Nothing too fancy, except on occasion.  Thomas is allergic to garlic, and I'm allergic to eggs.  (I offer that information just in case someone wants to take pity on me and send me some good ideas.)   We don't like spicy.  Other than that, ....

Wednesday it was really chilly and I made bean soup with ham, which actually was a nice change, because I don't make it often.  But I tell you the truth, I have a block when I sit here and try to think of something different for next week.  And I really wanted to get my menus and shopping lists made up for the week.  Oh well.  I guess I'll stop complaining.  Maybe my taste buds are dull and my creative juices are bland because of the time of year.  Maybe everything will perk up with Spring (which had better be just around the corner!).

Maybe I need one of Granny's Spring Tonics.  Maybe I just need some fresh green vegetables.  Mom always said at this time of the year that she was hungering for some field greens.  Maybe I should just be glad I have the means to have a choice in the first place.  Maybe I should just shut up.

Lol. No you shouldn't. It Is pretty awful doing menu's like that. I did it for a while then gave up! lol. All I can think of now Is mince and potatoes, (I only eat pork mince! lol) cottage pie, chicken casserole, Oh I have to stop or I will be heading to the kitchen! lol. Hope they help a bit. OKAY lol, heres one of mine that does an awesome job of changing when we need it, get hamburger meat, rice (uncooked) green peppers and chopped onions (i leave those out sometimes.) mush them all up into balls,
get two things of V8 juice and put it in a big pot, and put the meatballs in there cook em till the rice is done.

Then serve it over mashed potatoes.

I'm followinga new eating plan which I work out my menus for the week ahead, then shop it's much easier and a bit cheaper to if I'll e-mail some recipes later.

Sorry kid....no help from me I am afraid the menu I have is just about as boring as you say yours is....and right now we are cooking veggies....love my veggies...I did cook chicken breasts the other night....poured two cans of mushroom soup over them and put them into oven for about an hour...350...and they were so tender and good....none was left over...went well with the veggies....good luck to ya...and yes..I am thinking we all need a good dose of castor oil LOLOL....in other words...SPRING!!!!!  God Bless...Ora

I don't cook much anymore but yesterday I cooked pinto beans in the crock pot with salt pork and onion. Paula

i hear ya, lori.  it's hard to come up with something new and unusual - it has gotten so bad that jim has begun clipping recipes from our co-op magazine.  i left a recipe in one of the above entries - you can use plain black eye peas instead of the jalapeno ones.

Oh, what shellbeal4 fixes, we call porcupine meatballs.  I haven't had them in a long time.  You could put the rice and meat mixture into green peppers, bake in the V-8 juice, or wrapped in cabbage leaves, also can be baked in the V-8.  One of my favorite suppers has always been a breakfast supper.  Corned beef hash, with eggs, or french toast with sausage/topped with fruit and whip.  How about a white chicken pizza?  Prepare the dough and use cream of mushroom soup or a white sauce, add cooked chicken breast pieces, mushrooms, any veggie you'd like and top with white cheese.  Bake and enjoy.

I am of no help....I'm in the same situation.  I love to cook, and do it fairly well....and then, I get burned out and would rather fling myself off a cliff than think of another meal plan or cook anything.

I just go to allrecipies and click around until I find something of interest....

Lori, I LOVE to look through cookbooks and browse online to find new recipes! If you go to Kraftfoods.com, you can sign up for their quarterly magazine, Food & Family (it's free). There are lots of simple recipes in them, and I've made quite a few. They turn out really well.

I also love AllRecipes.com, where you can search by ingredients or type of meat, whatever. I've found lots of good recipes on there, too.

Doc hardly knows what to make of my favorite reciipes turning vegan.  Some he loves as my carrot cake recipe and some he can leave.  I made a black bean casserole yesterday which is very easy to make, and the verdict is out on that one.  I serve it with baked potatoes or a salad or with a wild rice side dish.  I just don't know if it is the right recipe for a family with kids.  So don't know if I can be of help.  Now that my diet has changed to vegan.   Gerry
